These creamy baby potatoes are great for a party snack melting in the mouth with kicking flavors
Ingredients:
Idaho baby potatoes- 40 small, boiled
Cumin- 1/2 tbsp, powder
Ginger- 1/2 tbsp, minced
Garlic- 2 cloves, minced
Salt- to taste
Coriander- 1/2 tbsp, powder
Cilantro leaves- 2 tbsp, finely chopped
Cardamom power- 1/4 tsp
Saffron- a few strands
Paprika- 1/2 tbsp
Onions- 1 large, individual layers removed and cut into 1 inch squares
Red pepper- 1 medium, cut into 1 inch squares
Lemon- half lemon, squeezed
Non-fat yogurt- 1 cup, hung in a muslin cloth to remove excess water
Olive oil- 2 tbsp and little more to brush
Bamboo sticks/skewers- 20 soaked for at least 30 minutes in water
Procedure:
1. Yogurt for marinade-
Hang the yogurt in a cheese cloth for 2-3 hours and drain out the excess water.
2. Boiling Potatoes-
In a large pot, boil the washed Idaho potatoes adding a pinch of salt. The potatoes should be done in 12-15 min, however keep a check so that they are not overcooked and the skin doesn't peel out. Once done allow them to cool completely.
3. Marinade-
In a large bowl, add hung yogurt, salt, cumin, ginger, garlic, coriander powder, cilantro leaves, paprika, cardamon powder, saffron, oil and lemon juice,. Add the boiled potatoes and the cubed onion and bell pepper. Mix lightly with a spatula until the marinade coats evenly. Refrigerate the marinade for 2 hours.
4. Grill/Bake-
Thread the marinated potatoes, onions and bell pepper in any combination of your choice on the bamboo skewers.
Preheat the grill or oven and brush the potatoes with some oil and grill them until they are slightly golden turning them. I have a conventional oven and I baked them for 10-15 minutes on 375 degree F turning once in between, then broiling them for 5 min just to give that charred effect.
Garnish with lemon and serve hot with your favorite sauce/dip.
Tips: If you don't find Indian spices use your favorite herbs and spices like rosemary, thyme or just lots of garlic and they will taste just good.
Those do look delicious. There is nothing like a perfectly cooked potato seasoned with a delicious arrangement of spices. The onions and peppers are a great addition for both flavor and texture. You can almost have a meal of just these :)
